  • 1/2 cup tahini (well-stirred)
  • 2 tablespoons maple syrup
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic (minced)
  • 1 teaspoon smoked paprika
  • Salt and black pepper (to taste)
  • 1 tablespoon sesame seeds (optional)
  • Fresh parsley or cilantro (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C) and place a rack in the center.
  2. Wash the delicata squash, cut off both ends, and slice crosswise into half-inch rings. Remove seeds from the center.
  3. In a large mixing bowl, whisk together tahini, maple syrup, olive oil, minced garlic, smoked paprika, salt, and pepper until smooth. Add a teaspoon of water if the mixture is too stiff.
  4. Add the squash rings to the bowl and toss gently until every ring is evenly coated.
  5. Line a large sheet pan with parchment paper. Arrange the squash rings in a single layer, ensuring space between each ring to prevent steaming.
  6. Roast for 20 minutes, then carefully flip each ring over.
  7. Roast for another 10-15 minutes, or until edges are golden brown and crispy, and squash is tender when pierced with a fork.
  8. Remove from oven, sprinkle with sesame seeds and fresh herbs if using, and let cool for 2-3 minutes before serving.

Notes

Ensure the oven is fully preheated for crispiness. Do not overcrowd the pan, as this causes steaming instead of roasting. Stir tahini thoroughly before use as it separates. If using a dark pan, reduce oven temperature by 25°F to prevent burning. Reheat in the oven to restore crispiness; avoid the microwave.
