A quick and easy 5-ingredient side dish featuring roasted delicata squash with maple syrup served over bitter greens with toasted pumpkin seeds.

  • 2 medium delicata squash
  • 3 tablespoons pure maple syrup
  • 2 tablespoons extra virgin olive oil
  • 4 cups arugula or mixed greens
  • 1/4 cup pumpkin seeds (pepitas)
  • Sea salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash the delicata squash thoroughly. Cut off the stem and bottom ends, slice in half lengthwise, scoop out seeds, and cut into half-inch thick half-moon slices.
  3. In a large mixing bowl, toss squash slices with olive oil, maple syrup, salt, and pepper until evenly coated. Let sit for 5 minutes.
  4. Line a large baking sheet with parchment paper or foil. Spread squash in a single layer without overlapping.
  5. Roast for 20-25 minutes, flipping halfway through, until edges are golden brown and crispy.
  6. While squash roasts, wash and thoroughly dry the arugula or mixed greens. Toss with a pinch of salt in a large serving bowl.
  7. Remove squash from oven and let cool for 2-3 minutes.
  8. Pour warm squash over the bed of greens.
  9. Sprinkle with toasted pumpkin seeds.
  10. Drizzle with extra maple syrup or balsamic vinegar if desired, and serve immediately.

Notes

Ensure squash slices are uniform in size for even cooking. Do not crowd the baking sheet to allow for caramelization and crispiness. Dry greens thoroughly to prevent sogginess. Pumpkin seeds can be toasted in a dry pan for 2 minutes before adding.
