These crispy cinnamon sugar roasted pumpkin seeds are the ultimate crunchy snack. By thoroughly drying the seeds and roasting them low and slow, you achieve a perfect, glass-like snap that is better than store-bought.

Ingredients

Scale
  • 2 cups raw pumpkin seeds (pepitas)
  • 3 tablespoons unsalted butter, melted
  • 3 tablespoons granulated white sugar
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon sea salt
  • ½ teaspoon vanilla extract (optional)

Instructions

  1. Extract seeds from pumpkin and place in a large bowl of cold water. Swirl to separate pulp; skim off floating debris and rinse seeds 2-3 times until water runs clear.
  2. Spread rinsed seeds on paper towels or a clean kitchen towel. Pat dry and let sit for 15-30 minutes until completely dry. This step is crucial for crispiness.
  3. Preheat oven to 325°F (165°C). In a mixing bowl, combine dried seeds, melted butter, sugar, cinnamon, and vanilla. Toss thoroughly until every seed is evenly coated.
  4. Line a rimmed baking sheet with parchment paper. Spread seeds in a single layer without crowding. Sprinkle sea salt evenly over the top.
  5. Roast for 20 minutes, stirring halfway through at the 10-minute mark to ensure even browning. Check for golden brown color and fragrant smell. If pale, roast in 5-minute increments.
  6. Remove from oven and let cool completely on the pan. Seeds will continue to crisp as they cool. Store in an airtight container once fully cooled.

Notes

Ensure seeds are completely dry before roasting to prevent sogginess. Do not overcrowd the pan, as seeds will steam instead of roast. Let seeds cool completely on the pan to achieve maximum crunch. If using store-bought seeds, ensure they are raw, not pre-roasted.
