Creamy Smoky Chipotle Qoso: Easy Game Day Dip

A rich, smoky, and spicy cheese dip made with sharp cheddar, Monterey Jack, and chipotle peppers in adobo sauce. Perfect for tailgating and game day gatherings.

  • 8 oz Sharp Cheddar Cheese, shredded
  • 8 oz Monterey Jack Cheese, shredded
  • 4 oz Cream Cheese, softened
  • 23 Chipotle Peppers in Adobo Sauce, minced
  • 2 tablespoons Adobo Sauce
  • 1/2 cup Heavy Cream
  • 2 cloves Garlic, minced
  • 1/2 teaspoon Cumin
  • Salt and Black Pepper, to taste

Instructions

  1. Prep ingredients by shredding cheeses, mincing garlic and chipotle peppers, and softening cream cheese.
  2. Place a medium saucepan over medium-low heat. Sauté minced garlic and chipotle peppers for about 1 minute until fragrant.
  3. Add softened cream cheese and heavy cream to the pan. Stir constantly until the cream cheese is melted and the mixture is smooth.
  4. Reduce heat to low. Add shredded cheddar and Monterey Jack cheese a handful at a time, stirring continuously until each addition is fully melted and incorporated.
  5. Stir in adobo sauce, cumin, salt, and black pepper. Taste and adjust seasoning or heat level as desired.
  6. Give the queso a final stir. If too thick, add a splash of warm cream. Serve immediately with tortilla chips or transfer to a slow cooker to keep warm.

Notes

Grate your own cheese to avoid anti-caking agents that prevent smooth melting. Keep heat low to prevent the cheese from separating or becoming grainy. For tailgating, transfer to a slow cooker on low to keep warm for hours.
