  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 1 can (28 oz) crushed tomatoes

  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • 15 ounces whole milk ricotta cheese
  • 1/2 cup heavy cream
  • 1/2 cup freshly grated parmesan cheese
  • 810 lasagna noodles (no-boil or regular, broken into pieces)
  • 1 cup shredded low-moisture mozzarella cheese
  • Fresh basil, chopped (for garnish)
  • High-quality olive oil (for sautéing)

Instructions

  1. Heat a large skillet over medium-high heat with olive oil. Add ground beef and cook until browned, breaking into crumbles. Add onions in the last 2 minutes to soften. Drain excess fat if necessary, then transfer meat and onions to the slow cooker.
  2. Add beef broth, crushed tomatoes, tomato paste, dried oregano, dried basil, and red pepper flakes to the slow cooker. Stir well to incorporate the tomato paste.
  3. Add broken lasagna noodles to the slow cooker and stir to submerge them. Cover and cook on LOW for 4-5 hours until noodles are tender.
  4. While the soup cooks, whisk together ricotta cheese, heavy cream, and half of the parmesan cheese in a small bowl until smooth.
  5. Once noodles are tender, turn the slow cooker to WARM. Ladle about 2 cups of hot soup into the cheese mixture and whisk vigorously to temper it. Pour the cheese mixture back into the slow cooker and stir gently.
  6. Sprinkle the remaining parmesan and all mozzarella cheese on top. Cover and let sit for 5 minutes until cheese melts. Stir gently to combine.
  7. Taste and season with salt and black pepper as needed. Garnish with fresh basil and serve hot.
