A cozy and creamy pumpkin spice overnight oats recipe with a maple syrup swirl, perfect for a quick and comforting autumn breakfast.

Ingredients

Scale
  • 1/2 cup (45g) old-fashioned rolled oats
  • 1/3 cup (80g) pumpkin purée (canned or fresh)
  • 1/2 cup (120ml) milk (whole, almond, or oat milk)
  • 1/4 cup (60g) plain full-fat Greek yogurt
  • 2 tablespoons (30ml) maple syrup plus extra for swirling
  • 1 tablespoon (12g) chia seeds
  • 1/2 teaspoon (2.5ml) vanilla extract
  • 1 teaspoon (2g) pumpkin pie spice (cinnamon, nutmeg, ginger, cloves)
  • Pinch of salt

Instructions

  1. Combine dry ingredients: In a jar or bowl, add oats, chia seeds, pumpkin pie spice, and salt. Stir to mix evenly.
  2. Mix wet ingredients: In a separate bowl, whisk together pumpkin purée, milk, Greek yogurt, maple syrup, and vanilla extract until smooth.
  3. Combine wet and dry: Pour wet mixture over dry ingredients and stir thoroughly until coated. Add up to 2 tablespoons more milk if too thick.
  4. Seal and refrigerate: Cover tightly and refrigerate overnight or at least 6 hours to allow oats and chia seeds to soften.
  5. Serve with maple swirl: Stir oats gently and swirl in extra maple syrup before serving. Optionally add extra pumpkin pie spice or chopped nuts.

Notes

Use rolled oats for best texture; do not skip chia seeds for thickness; add maple syrup just before serving to keep sweetness fresh; adjust spices to taste; can substitute pumpkin purée with mashed banana or fresh fruit for seasonal variations; for dairy-free, use plant-based yogurt and milk.
