Instructions

  1. Mash the ripe banana in a medium mixing bowl with a fork until mostly smooth.
  2. Add the milk, Greek yogurt, peanut butter, maple syrup, vanilla extract, and a pinch of salt. Whisk until the peanut butter is fully incorporated and the mixture is smooth and creamy.
  3. Pour in the rolled oats and chia seeds. Stir with a spatula until all oats are coated and no dry pockets remain.
  4. Divide the mixture evenly among 4 to 6 mason jars or airtight containers, leaving about ½ inch of space at the top.
  5. Seal the jars tightly and refrigerate for at least 6 hours, preferably overnight (8 to 12 hours).
  6. The next morning, remove jars from the fridge and stir each one. The mixture should be thick, creamy, and spoonable. If too thick, stir in an extra tablespoon of milk.
