A rich, spicy, and creamy party appetizer made with rotisserie chicken, cream cheese, buffalo sauce, and a blend of cheddar and blue cheese. This easy-to-make dip is perfect for game day and comes together in under 20 minutes.

  • 8 ounces cream cheese, softened
  • 2 cups rotisserie chicken, shredded
  • 1/2 cup buffalo sauce (e.g., Frank’s RedHot)
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup blue cheese dressing
  • 4 stalks green onions, sliced
  • 2 stalks celery, finely diced
  • 2 tablespoons butter, melted

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Shred the rotisserie chicken and finely dice the celery. Slice the green onions, keeping them separate.
  3. In a large mixing bowl, combine the softened cream cheese and buffalo sauce until smooth.
  4. Stir in the shredded cheddar cheese and blue cheese dressing until combined.
  5. Fold in the shredded chicken and diced celery.
  6. Grease a 9×13 inch baking dish with melted butter. Pour the chicken mixture into the dish and spread evenly.
  7. Mix any remaining cheddar cheese with the sliced green onions and sprinkle evenly over the top layer.
  8. Bake for 15-20 minutes until the cheese is melted and bubbly around the edges.
  9. Optional: Broil for the last 2 minutes for a browned top, watching closely to prevent burning.
  10. Remove from oven and let cool for 10 minutes to allow the dip to thicken before serving.

Notes

Ensure cream cheese is fully softened to avoid lumps. Shred your own cheese for better melting. This dip does not freeze well due to dairy separation. Can be made in a slow cooker on low for 2 hours for parties.
