  • 1/4 cup (60g) plain Greek yogurt (full-fat or 2%)
  • 1/3 cup (80ml) milk (any kind)
  • 2 tablespoons (32g) creamy natural peanut butter
  • 1 tablespoon (15ml) honey or maple syrup
  • 1 tablespoon (12g) chia seeds
  • 1/2 teaspoon vanilla extract
  • Pinch of salt (if peanut butter is unsalted)

Instructions

  1. In a small bowl or liquid measuring cup, combine Greek yogurt, milk, peanut butter, honey or maple syrup, and vanilla extract. Whisk until smooth and fully incorporated.
  2. Add rolled oats and chia seeds to a mason jar or airtight container.
  3. Pour the wet mixture over the oats and chia seeds. Stir thoroughly until every oat is coated and chia seeds are evenly distributed.
  4. Add a pinch of salt if using unsalted peanut butter. Taste and adjust sweetness or salt as needed.
  5. Seal the jar tightly and refrigerate for at least 4 hours, preferably overnight.
  6. Before eating, stir the oats. If too thick, add a splash of milk; if too thin, let sit for 30 more minutes.
  7. Add desired toppings (e.g., sliced banana, dark chocolate chips, chopped peanuts, extra peanut butter, fresh berries) and enjoy.

Notes

For best texture, mix peanut butter thoroughly into wet ingredients first. Use rolled oats, not steel-cut or quick-cooking. Chia seeds need at least 4 hours to thicken. Oats keep in fridge for up to 5 days; do not freeze. For vegan option, use coconut-based yogurt and plant-based milk. For nut-free, substitute sunflower seed butter.
