  • 1/4 teaspoon freshly ground black pepper
  • Red pepper flakes, optional for heat

Instructions

  1. Prep the garlic by mincing fresh cloves or roasting a whole head of garlic at 400°F for 40 minutes until soft, then mashing.
  2. Cut the cream cheese into small cubes and let it sit at room temperature for 30 minutes to soften.
  3. In a small saucepan over medium-low heat, combine the softened cream cheese and heavy cream. Stir constantly for 3-4 minutes until smooth and liquid, but not boiling.
  4. Stir in the minced or mashed garlic, garlic powder, black pepper, and red pepper flakes. Cook for 1-2 minutes until fragrant.
  5. Remove the pan from the heat. Slowly stir in the grated Parmesan cheese until fully incorporated and glossy.
  6. Adjust consistency by adding a splash of milk or cream if too thick, keeping in mind it will thicken as it cools.
  7. Transfer to a serving bowl and serve immediately with dippers.

Notes

Use full-fat block cream cheese rather than spreadable tubs for better texture. Always remove the pan from heat before adding Parmesan to prevent clumping.
