  • 1 tbsp olive oil
  • 68 cloves fresh garlic, minced
  • 1 cup heavy cream
  • 1/2 cup low-sodium chicken broth
  • 1 cup freshly grated Parmesan cheese (Parmigiano-Reggiano recommended)
  • 1 tsp Italian seasoning
  • Pinch of red pepper flakes
  • Salt and freshly cracked black pepper, to taste
  • 2 tbsp all-purpose flour (optional, for dusting)

Instructions

  1. Pat chicken thighs dry with paper towels and season generously with salt, pepper, and Italian seasoning. Lightly dust with flour if using, shaking off excess.
  2. Heat a cast iron skillet or heavy-bottomed pan over medium-high heat. Add butter and olive oil, heating until butter stops foaming and shimmers.
  3. Sear chicken thighs in a single layer for 4-5 minutes per side until golden brown. Remove chicken to a plate.
  4. Reduce heat to medium. Add minced garlic to the pan and sauté for 30-60 seconds until fragrant, being careful not to burn.
  5. Pour in chicken broth and scrape up browned bits from the bottom of the pan. Simmer for 1-2 minutes to reduce slightly.
  6. Add heavy cream and bring to a gentle simmer. Cook for 2-3 minutes until the sauce begins to thicken.
  7. Reduce heat to low. Stir in grated Parmesan cheese and red pepper flakes until melted and smooth. Taste and adjust seasoning.
  8. Return chicken thighs to the pan, nestling them into the sauce. Cover and simmer for 5-7 minutes until chicken reaches an internal temperature of 165°F (74°C).
  9. Serve immediately over egg noodles, mashed potatoes, or crusty bread, garnished with fresh parsley if desired.

Notes

Do not skip drying the chicken; moisture prevents proper searing. Use fresh garlic and grate your own Parmesan cheese for the best texture and flavor. Avoid boiling the sauce vigorously to prevent separation. This recipe does not freeze well due to the dairy sauce.
