A comforting, easy-to-make white chicken chili that uses simple ingredients and a slow cooker. By searing aromatics and adding dairy at the end, this recipe prevents burning and curdling for a silky, restaurant-quality texture.

  • 1.5 lbs boneless, skinless chicken thighs
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 (4-ounce) can diced green chiles
  • 1 teaspoon ground cumin
  • 0.5 teaspoon ground coriander
  • 1 (32-ounce) carton low-sodium chicken broth
  • 2 (15-ounce) cans Great Northern or Cannellini beans, rinsed and drained
  • 0.5 cup heavy cream
  • 4 ounces cream cheese, softened
  • Salt and black pepper, to taste
  • Fresh cilantro, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté diced onion until translucent (about 3 minutes), then add minced garlic and cook for 30 seconds until fragrant. Transfer to a 6-quart slow cooker.
  2. Add chicken pieces, chicken broth, green chiles, cumin, coriander, salt, and pepper to the slow cooker. Stir gently.
  3. Cover and cook on Low for 6-7 hours or on High for 3-4 hours until chicken is cooked through.
  4. Remove chicken, shred with two forks, and return to the pot.
  5. Add rinsed white beans to the pot and cook for an additional 30 minutes on Low.
  6. In a small bowl, whisk softened cream cheese until smooth. Gradually whisk in heavy cream, then stir this mixture into the slow cooker.
  7. Turn slow cooker to Warm and let sit for 10-15 minutes, stirring occasionally, until cream cheese is melted and chili is thickened.
  8. Taste and adjust seasoning with salt and pepper. Stir in fresh cilantro and serve hot.

Notes

Do not add dairy (cream cheese and heavy cream) at the beginning of cooking, as it may curdle. Always add them in the last 30 minutes. Chicken thighs are preferred over breasts to prevent dryness. For a thicker chili, mash some beans against the side of the pot before adding dairy. This recipe is naturally gluten-free.
