A luxurious, layered iced coffee drink featuring a thick, pale beige pumpkin spice cream foam that floats atop cold brew coffee. This easy 5-minute recipe captures the texture and flavor of popular coffee shop versions using simple pantry ingredients.

  • 1/2 cup heavy whipping cream
  • 2 tablespoons whole milk
  • 2 tablespoons powdered sugar
  • 1 tablespoon pure pumpkin puree
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon vanilla extract
  • 1 to 1.5 cups cold brew coffee
  • Ice cubes

Instructions

  1. Pour 1 to 1.5 cups of cold brew coffee into a tall glass and fill to the top with ice cubes.
  2. In a medium mixing bowl, combine the heavy whipping cream, whole milk, pumpkin puree, powdered sugar, pumpkin pie spice, and vanilla extract.
  3. Whip the mixture using an electric hand mixer or handheld frother on medium-high speed until soft peaks form and the mixture is thick and pourable (about 2-3 minutes). Do not over-whip.
  4. Hold a spoon upside down over the glass of iced coffee and slowly pour the pumpkin cream foam over the back of the spoon to create a distinct layer on top.
  5. Serve immediately with a straw for sipping and a spoon for eating the foam.

Notes

Ensure all ingredients, especially the cream and bowl, are very cold to help the foam hold its shape. Use 100% pure pumpkin puree, not pie filling. For a dairy-free version, substitute heavy cream with chilled full-fat coconut cream. The foam is best served immediately but can be stored in the fridge for up to 24 hours.
