Creamy Butternut Squash Lasagna with Sage Brown Butter

A cozy, crowd-pleasing lasagna that swaps traditional meat for roasted butternut squash puree, layered with ricotta and mozzarella, and finished with a nutty sage brown butter sauce.

  • 1 large butternut squash, peeled, seeded, and cubed
  • 1/2 cup unsalted butter
  • 1 bunch fresh sage leaves
  • 1 box no-boil lasagna noodles
  • 1 large container whole milk ricotta cheese
  • 2 cups shredded low-moisture mozzarella cheese
  • 1/2 cup finely grated Pecorino Romano or Parmesan cheese
  • 3 cloves garlic, minced
  • Pinch of fresh nutmeg
  • Sea salt and black pepper to taste
  • Olive oil for roasting squash
  • 1 egg (for cheese filling)

Instructions

  1. Preheat oven to 400°F (200°C). Toss cubed squash with olive oil, salt, and pepper, then roast for 30 minutes until tender and browned.
  2. Blend roasted squash with minced garlic, nutmeg, and half of the Pecorino cheese until smooth.
  3. In a small saucepan, melt butter over medium heat until it turns golden brown and smells nutty. Add sage leaves and fry for 30 seconds until crispy. Remove from heat.
  4. In a bowl, mix ricotta, remaining Pecorino, egg, salt, and pepper until smooth.
  5. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  6. Layer the lasagna: spread squash puree on bottom, add noodles, half the puree, half the ricotta mixture, and one-third of the mozzarella. Repeat layers. Top with final noodles.
  7. Cover with foil and bake for 30 minutes. Remove foil and bake for another 15 minutes until bubbly and golden.
  8. Let rest for 15 minutes before slicing. Drizzle with sage brown butter and garnish with crispy sage leaves.

Notes

Roasting the squash is crucial to prevent a watery lasagna. Drain ricotta if it appears too wet. Let the lasagna rest for at least 15 minutes to allow layers to set. Can be assembled ahead and refrigerated for up to 24 hours.
