A quick and easy creamy basil pesto pasta featuring roasted cherry tomatoes and rich burrata cheese, perfect for satisfying weekday dinners or casual gatherings.

  • 12 oz linguine or fettuccine pasta
  • 2 cups (300 g) cherry tomatoes, fresh
  • 2 cups loosely packed fresh basil leaves
  • 1/4 cup (30 g) toasted pine nuts
  • 2 cloves garlic, minced
  • 1/2 cup (50 g) freshly grated Parmesan cheese
  • 1/4 cup (60 ml) heavy cream
  • 1/3 cup (80 ml) extra virgin olive oil
  • 8 oz (225 g) burrata cheese
  • Salt and pepper to taste
  • Red pepper flakes (optional, a pinch)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly oil it.
  2. Toss cherry tomatoes with 1 tablespoon olive oil, salt, and pepper. Spread on the baking sheet and roast for 15-20 minutes, stirring halfway, until soft and blistered.
  3. Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente (8-10 minutes). Reserve 1/2 cup pasta water before draining.
  4. In a food processor, combine basil leaves, toasted pine nuts, minced garlic, and grated Parmesan. Pulse until finely chopped.
  5. With the processor running, slowly drizzle in olive oil until smooth. Add heavy cream and pulse to combine. Season with salt and pepper. Add reserved pasta water as needed to loosen the pesto.
  6. Transfer drained pasta to a large mixing bowl. Add pesto and gently toss to coat, adding more pasta water if needed.
  7. Fold in roasted cherry tomatoes carefully.
  8. Serve immediately topped with dollops of burrata cheese and sprinkle with red pepper flakes if desired.

Notes

Toast pine nuts carefully over medium-low heat to avoid burning. Use reserved pasta water to loosen pesto sauce for better coating. Let burrata sit at room temperature for 15 minutes before serving for maximum creaminess. Pesto can be made ahead and stored with olive oil on top to prevent browning.
