  • 1 cup (200g) granulated sugar
  • ½ cup (113g) unsalted butter, softened
  • 2 large eggs, at room temperature
  • ¾ cup (180ml) whole milk
  • 2 teaspoons vanilla extract
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup (226g) unsalted butter, softened (for frosting)
  • 3 ½ cups (440g) powdered sugar, sifted
  • ½ cup (50g) unsweetened cocoa powder
  • 3–4 tablespoons (45-60ml) heavy cream
  • 1 teaspoon vanilla extract (for frosting)
  • ¼ teaspoon salt (for frosting)
  • 1 bag (about 60 pieces) candy corn
  • 12 pairs candy eyes
  • Orange candy melts or orange frosting
  • Red candy melts or red frosting
  • ½ cup (85g) chocolate chips or melting wafers

Instructions

  1. Preheat your oven to 350°F (175°C). Line your muffin tin with 12 paper liners.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, mixing well after each addition. Add the vanilla extract.
  5. Add half the flour mixture to the butter mixture and mix on low speed until just combined. Pour in half the milk and mix again. Repeat with the remaining flour and milk. Mix until just combined.
  6. Divide the batter evenly among the 12 liners, filling each about two-thirds full.
  7. Bake for 18-20 minutes, until a toothpick inserted into the center comes out clean or with just a few moist crumbs. Let cool in the pan for 5 minutes, then transfer to a cooling rack to cool completely.
  8. While the cupcakes cool, beat the softened butter in a large bowl until creamy. Gradually add the sifted powdered sugar and cocoa powder, mixing on low speed. Add the heavy cream one tablespoon at a time until smooth and pipeable. Beat in the vanilla and salt.
  9. Fit a piping bag with a star tip and fill it with the chocolate frosting. Once the cupcakes are completely cool, pipe a swirl of frosting onto each one.
  10. Line a baking sheet with parchment paper. Arrange the candy corn in groups of 5, fanning them out like turkey tail feathers. Melt the chocolate chips or wafers, then transfer to a piping bag fitted with a small round tip. Pipe thin lines of chocolate across the candy corn feathers. Let the chocolate set completely, about 15-20 minutes at room temperature or 5 minutes in the fridge.
  11. Gently press the candy corn feather clusters into the back of each frosted cupcake. Attach two candy eyes to the front of each cupcake using a tiny dab of frosting. Use the orange candy melt or frosting to pipe a small triangle beak just below the eyes. Add a small red wattle beneath the beak.
  12. Refrigerate the finished cupcakes for about 10 minutes to firm up the decorations.

Notes

Room temperature ingredients matter. Don’t overmix the batter. Let cupcakes cool completely before frosting. When melting chocolate for feather details, do it in 20-second bursts in the microwave, stirring between each one. If frosting is too soft, refrigerate for 10 minutes; if too stiff, microwave for 5 seconds and stir.
