  • ½ cup sun-dried tomatoes (drained and chopped)
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • ½ cup freshly grated parmesan cheese
  • 4 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon red pepper flakes (or to taste)
  • Salt and black pepper to taste
  • 2 tablespoons cornstarch (optional, for thickening)
  • 2 tablespoons cold water (for slurry)
  • Fresh basil or parsley for garnish
  • Extra grated parmesan for topping
  • Crusty bread or garlic bread for serving

Instructions

  1. Prep your ingredients: Drain and chop sun-dried tomatoes, mince garlic, and measure out spices.
  2. Layer ingredients in the slow cooker: Place chicken thighs in the bottom, sprinkle with sun-dried tomatoes and garlic, pour in chicken broth, and add oregano, basil, red pepper flakes, salt, and pepper. Stir gently.
  3. Cook on low for 6-7 hours or high for 3-4 hours. Do not lift the lid during cooking.
  4. Shred the chicken: Remove chicken thighs, shred with two forks, and return to the slow cooker.
  5. Add cream and parmesan: Stir in heavy cream and parmesan until melted and smooth. Adjust seasoning.
  6. Thicken the broth (optional): Mix cornstarch with cold water to make a slurry, stir into soup, and cook on high for 10-15 minutes until thickened.
  7. Serve and garnish: Ladle into bowls, top with fresh basil or parsley, extra parmesan, and black pepper. Serve with crusty bread.

Notes

Add dairy at the end to prevent curdling. For best texture, cook on low. Freeze without cream and parmesan for best results. Can be made dairy-free with coconut milk and nutritional yeast.
