  • 2 pounds Roma tomatoes
  • 1 whole head garlic
  • 1 large yellow onion, diced
  • 3 tablespoons olive oil, divided
  • 2 cups low-sodium vegetable broth
  • 1 teaspoon dried thyme
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • ¼ cup heavy cream or full-fat coconut milk (optional)
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. Wash and dry the tomatoes. Cut each in half lengthwise. Arrange cut-side up on the baking sheet. Drizzle with 2 tablespoons olive oil, sprinkle with ½ teaspoon salt and ¼ teaspoon black pepper. Toss gently and spread into a single layer.
  3. Slice off the top ¼ inch of the garlic head to expose the cloves. Drizzle with remaining 1 tablespoon olive oil. Wrap tightly in aluminum foil and place on the baking sheet with the tomatoes.
  4. Roast for 40-45 minutes until tomatoes are shriveled and blistered, and garlic is soft and golden.
  5. While roasting, heat 1 tablespoon olive oil in a large pot over medium heat. Add diced onion and cook 5-7 minutes until soft and translucent. Add dried thyme and red pepper flakes (if using) and cook 1 minute more.
  6. Remove roasted vegetables from oven. Let garlic cool slightly, then squeeze the softened cloves into the pot with the onions. Discard skins.
  7. Scrape all roasted tomatoes and juices from the baking sheet into the pot.
  8. Add vegetable broth and stir. Bring to a gentle simmer over medium heat, then reduce heat to low and cook for 10 minutes.
  9. Blend the soup using an immersion blender directly in the pot, or let cool 5 minutes and blend in batches in a countertop blender (fill no more than halfway, hold lid with a towel).
  10. Return blended soup to the pot if needed. Stir in heavy cream or coconut milk if using. Taste and adjust seasoning. Heat gently over low heat for 2-3 minutes until warmed through.
  11. Serve hot, garnished with fresh basil.

Notes

Don’t rush the roast—full 40-45 minutes is key for deep flavor. Use a rimmed baking sheet to catch juices. Wrap garlic in foil to keep it moist. Blend hot liquids carefully. Taste before adding cream; some batches are sweet enough without it. Soup tastes even better the next day.
