Cozy Persimmon and Burrata Salad with Honey

A simple yet elegant fall salad featuring sweet Fuyu persimmons, creamy burrata, and a drizzle of honey. It’s a quick, no-cook recipe that feels fancy enough for a dinner party but is easy enough for a weeknight.

Ingredients

  • 2–3 Fuyu persimmons, firm but ripe
  • 1 large ball burrata cheese (about 8 oz)
  • 2–3 tablespoons good quality honey (such as orange blossom or wildflower)
  • Flaky sea salt (to taste)
  • Freshly cracked black pepper (to taste)
  • Fresh thyme or rosemary (a few sprigs, optional)
  • ¼ cup toasted walnuts or pecans (optional)
  • Extra virgin olive oil (optional, for drizzling)
  • Microgreens or arugula (a handful, optional)

Instructions

  1. Take the burrata out of the fridge about 15-20 minutes before serving to bring it to room temperature.
  2. Wash and dry the persimmons. Using a sharp knife, slice off the top green stem. Slice the persimmons crosswise into thin rounds, about ¼-inch thick.
  3. On a large serving plate or wooden board, arrange the persimmon slices in a single layer, slightly overlapping each other.
  4. Gently place the ball of burrata in the center of the persimmons. Using your hands or a fork, carefully tear it open to expose the creamy center.
  5. Drizzle the honey generously over the burrata and the persimmons.
  6. Sprinkle a generous pinch of flaky sea salt over the whole thing, then crack some fresh black pepper over the top.
  7. If using, scatter the toasted walnuts or pecans over the top and tuck a few sprigs of fresh thyme or rosemary around the plate. Add a handful of microgreens or arugula if desired.
  8. Serve immediately with crusty bread or crostini.

Notes

This salad is best served immediately. The persimmons will release their juices and get soggy if left to sit. For best results, bring the burrata to room temperature before serving. If your honey is too thick to drizzle, microwave it for 10 seconds to loosen it up. Do not use Hachiya persimmons as they are astringent and will make your mouth feel dry.
