Transform your Thanksgiving leftovers into crispy, savory waffles with gravy. This quick and easy recipe combines leftover turkey and stuffing in a waffle iron for a comforting, crowd-pleasing meal.

Ingredients

Scale
  • 2 cups leftover stuffing
  • 1 ½ cups cooked turkey, shredded or chopped
  • 2 large eggs, beaten
  • ¼ cup turkey gravy
  • ¼ cup all-purpose flour
  • ¼ cup shredded cheddar cheese (optional)
  • ½ teaspoon black pepper
  • ¼ teaspoon salt (optional, to taste)
  • Leftover turkey gravy, warmed (for serving)
  • Cranberry sauce (optional, for serving)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your waffle iron to medium-high heat. Spray both plates with non-stick cooking spray or brush with melted butter.
  2. If your leftover turkey is in large chunks, shred or chop it into small, bite-sized pieces (about ½ inch or smaller).
  3. In a large bowl, beat the two eggs until frothy. Add the ¼ cup of gravy and mix until combined.
  4. Add the stuffing, shredded turkey, flour, cheese (if using), pepper, and salt to the bowl. Mix until well combined. The mixture should be moist but not soggy—it should hold together when squeezed. If too dry, add another tablespoon of gravy; if too wet, add a little more flour.
  5. Let the mixture rest for 2-3 minutes so the flour can absorb moisture.
  6. Scoop about ½ cup of the mixture onto the center of the preheated waffle iron. Close the lid and cook for 4-6 minutes, or until golden brown and crispy on the outside. Do not open the lid too early.
  7. Use a spatula to carefully remove the waffle. Place on a baking sheet in a 200°F oven to keep warm while cooking remaining batches. Makes about 4-6 waffles.
  8. While waffles cook, warm leftover gravy in a small saucepan over low heat, stirring occasionally. Thin with a splash of chicken broth or water if too thick.
  9. Serve immediately: place a waffle on a plate, ladle warm gravy over the top, add a dollop of cranberry sauce if desired, and garnish with fresh parsley.

Notes

For best results, use leftover stuffing that is not too dry. If using boxed stuffing, Pepperidge Farm gives the crispiest results. Shred turkey by hand for better browning. Let the mixture rest before cooking to help bind. Clean waffle iron immediately after use to prevent sticking.
