Cozy Kielbasa and White Bean Soup: Easy 30-Minute Dinner

  • 1214 oz kielbasa, sliced into half-moons
  • 2 cans (15 oz each) white beans (cannellini or Great Northern), drained and rinsed
  • 1 medium yellow onion, diced
  • 2 medium carrots, peeled and diced
  • 2 stalks celery, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 can (14.5 oz) fire-roasted diced tomatoes, undrained
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 12 tablespoons fresh lemon juice or red wine vinegar
  • Fresh parsley for garnish (optional)

Instructions

  1. Prep the ingredients: Dice the onion, carrots, and celery. Mince the garlic. Slice the kielbasa into 1/4-inch thick half-moons. Drain and rinse the white beans. Open the can of diced tomatoes. Measure out the broth and spices.
  2. Heat 1 tablespoon of olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the sliced kielbasa in a single layer (work in batches if needed) and cook undisturbed for 2-3 minutes until deeply browned. Stir and cook for another 2-3 minutes until browned on both sides. Transfer the kielbasa to a plate and set aside.
  3. Reduce the heat to medium. Add the remaining 1 tablespoon of olive oil to the pot. Add the diced onion, carrots, and celery. Cook for about 5 minutes, stirring occasionally, until the vegetables have softened and the onion is translucent. Add a splash of broth if the pot looks dry.
  4. Stir in the minced garlic, dried thyme, and a generous pinch of black pepper. Cook for 30-60 seconds until fragrant, being careful not to burn the garlic.
  5. Pour in the chicken broth and the can of diced tomatoes (with their juice). Use a wooden spoon to scrape up any browned bits from the bottom of the pot. Stir to combine.
  6. Add the drained white beans and the bay leaf to the pot. Bring the soup to a boil, then reduce the heat to low and let it simmer uncovered for 10-12 minutes. For a thicker soup, mash about half a cup of the beans against the side of the pot before adding them.
  7. Return the browned kielbasa to the pot. Stir and let it heat through for about 2 minutes. Remove the bay leaf and discard it. Taste and adjust seasoning with salt and pepper as needed.
  8. Just before serving, stir in 1-2 tablespoons of fresh lemon juice or red wine vinegar. Ladle the soup into bowls and garnish with fresh parsley if desired.

Notes

Don’t skip browning the kielbasa—it builds deep flavor. Use low-sodium broth and unsalted beans to control salt. For a creamier texture without dairy, mash some beans before adding. The splash of lemon juice or vinegar at the end is essential for brightness. The soup tastes even better the next day.
