  • 1 can (15 oz) whole kernel corn, drained
  • 1 can (15 oz) cream-style corn
  • 1 cup full-fat sour cream
  • 1/2 cup unsalted butter, melted
  • 2 large eggs, room temperature
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper, freshly ground
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Drain the whole kernel corn in a strainer. Do not drain the cream-style corn.
  3. Melt 1/2 cup unsalted butter in a microwave-safe bowl in 20-second bursts. Set aside to cool slightly.
  4. In a large mixing bowl, combine the Jiffy Corn Muffin Mix, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Stir to distribute seasonings.
  5. Add the 2 eggs, 1 cup sour cream, and melted butter to the bowl. Stir until just combined (a few lumps are fine).
  6. Fold in the drained whole kernel corn and the entire can of cream-style corn (undrained). If using, fold in 1/2 cup shredded cheddar cheese.
  7. Pour the batter into the greased baking dish and spread evenly. Tap the dish gently on the counter to release air bubbles.
  8. Bake for 45-50 minutes, until the top is golden brown and the edges pull away from the dish. The center should be set with a slight jiggle.
  9. Check for doneness by inserting a toothpick or knife into the center; it should come out clean or with a few moist crumbs.
  10. Let the casserole rest for 5-10 minutes before serving to allow it to set.

Notes

For a cheesy version, stir in 1/2 cup shredded cheddar cheese. For a gluten-free option, use a gluten-free cornbread mix. To make ahead, assemble the casserole the night before and refrigerate; add 10 minutes to the baking time. Leftovers keep in the refrigerator for up to 4 days or freeze for up to 3 months.
