Cozy Honey Garlic Salmon with Roasted Veggies

A quick and easy weeknight dinner featuring tender salmon fillets glazed with a sweet and savory honey garlic sauce, roasted alongside colorful vegetables until caramelized and tender.

  • 4 salmon fillets (6 oz each), skin on or off
  • 1/3 cup honey (runny, mild-flavored like clover or orange blossom)
  • 4 cloves garlic, minced
  • 3 tablespoons soy sauce (low-sodium; tamari or coconut aminos for gluten-free)
  • 2 tablespoons olive oil (plus extra for drizzling on veggies)
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 2 cups broccoli florets, cut into bite-sized pieces
  • 1 medium red bell pepper, sliced into strips
  • 1 medium zucchini, halved and sliced into half-moons
  • 1 small red onion, cut into wedges
  • 2 tablespoons olive oil (for veggies)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • Salt and black pepper, to taste (for veggies)
  • Fresh parsley or cilantro, chopped (for garnish)
  • Sesame seeds (optional, for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil. If using foil, lightly spray with cooking oil.
  2. Wash and chop broccoli, bell pepper, zucchini, and red onion into similar-sized pieces. Toss with 2 tablespoons olive oil, garlic powder, oregano, salt, and pepper. Spread on one side of the prepared baking sheet, leaving room for the salmon.
  3. In a small bowl, whisk together honey, minced garlic, soy sauce, olive oil, rice vinegar, and red pepper flakes (if using).
  4. Pat salmon fillets dry with paper towels. Season both sides lightly with salt and pepper. Place fillets on the empty side of the baking sheet, skin-side down if skin is on.
  5. Spoon about half of the honey garlic mixture over the salmon fillets, spreading evenly. Reserve the remaining glaze.
  6. Roast for 12-15 minutes, depending on thickness. Salmon should be opaque and flake easily; veggies should be tender with slightly charred edges.
  7. About 2 minutes before the salmon is done, brush on the remaining glaze.
  8. Remove from oven and let rest for 2-3 minutes. Sprinkle with fresh parsley or cilantro, sesame seeds, and serve with lemon wedges.

Notes

Pat salmon dry for best caramelization. Add second layer of glaze near end of cooking to prevent burning. For heartier veggies, roast them alone for 10 minutes before adding salmon. Use a meat thermometer for perfect doneness (125-130°F for medium).
