A perfectly sized, incredibly juicy herb butter roasted turkey breast for two. This recipe makes a roast dinner feel doable on a random Wednesday with simple ingredients and minimal prep.

Ingredients

  • Bone-in, skin-on turkey breast (2 to 2.5 pounds)
  • Unsalted butter (4 tablespoons, softened)
  • Fresh rosemary (2 tablespoons, finely chopped)
  • Fresh thyme (1 tablespoon, leaves stripped)
  • Fresh sage (1 tablespoon, finely chopped)
  • Garlic (3 cloves, minced)
  • Salt (1.5 teaspoons, plus more for seasoning)
  • Black pepper (1 teaspoon, freshly ground)
  • Olive oil (1 tablespoon)
  • Chicken or turkey broth (1/2 cup)
  • Optional aromatics: 1/2 onion, 2 garlic cloves smashed, a few sprigs of thyme

Instructions

  1. Take the turkey out of the fridge 30 minutes before cooking. Set it on a plate and let it come to room temperature.
  2. Preheat your oven to 375°F (190°C). Position the rack in the center of the oven.
  3. Make the herb butter: In a small bowl, combine the softened butter, chopped rosemary, thyme, sage, minced garlic, 1.5 teaspoons of salt, and 1 teaspoon of pepper. Mash together with a fork until well combined.
  4. Pat the turkey breast completely dry with paper towels.
  5. Gently loosen the skin: Using your fingers, carefully work your way under the turkey skin, separating it from the meat without tearing it.
  6. Spread half the herb butter under the skin, pushing it evenly across the breast meat.
  7. Spread the remaining herb butter all over the outside of the skin. Drizzle the olive oil over the top and rub it in gently.
  8. Season the outside with a little more salt and pepper.
  9. Place the turkey breast in your roasting pan. If using optional aromatics, scatter them around the turkey. Pour the broth into the bottom of the pan.
  10. Roast for 45 to 55 minutes. Start checking the internal temperature at 45 minutes using an instant-read thermometer. Insert it into the thickest part of the breast without touching bone. You’re looking for 155°F (68°C).
  11. If the skin is browning too quickly, tent loosely with foil around the 30-minute mark.
  12. Let it rest for 15 minutes before slicing. Transfer the turkey to a cutting board and tent it loosely with foil.
  13. Slice and serve. Cut against the grain into thick slices. Spoon any pan juices over the top.

Notes

Don’t skip the resting time. Use an instant-read thermometer, not the pop-up timer. Let the butter soften properly. Pat the skin dry. If the skin tears, don’t panic. Make extra herb butter to use later.
