This no-bean pumpkin turkey chili is the ultimate comfort food for cold weather. It’s thick, hearty, and packed with smoky, savory flavor from perfectly balanced spices and lean ground turkey.

  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 2 pounds ground turkey (93% lean)
  • 3 tablespoons chili powder
  • 2 teaspoons ground cumin

  • 1 teaspoon dried oregano
  • 1 ½ teaspoons salt
  • ½ teaspoon black pepper
  • 1 can (15 ounces) pumpkin purée (not pumpkin pie filling)
  • 2 cups low-sodium chicken broth
  • 1 can (14.5 ounces) diced tomatoes (with juices, preferably fire-roasted)
  • Optional toppings: shredded cheddar cheese, sour cream, sliced avocado, fresh cilantro, lime wedges

Instructions

  1. Sauté the Aromatics: Heat olive oil in a large skillet over medium heat. Add diced onion and cook for 5-7 minutes until soft and translucent. Add minced garlic and cook for 30 seconds until fragrant.
  2. Brown the Turkey: Add ground turkey to the skillet. Break it up with a wooden spoon and cook for 6-8 minutes until no pink remains and the meat is nicely browned. Drain excess liquid if needed.
  3. Add the Spices: Sprinkle chili powder, cumin, smoked paprika, oregano, salt, and pepper over the cooked turkey. Stir and cook for 1 minute to toast the spices.
  4. Transfer to Crockpot: Scrape the turkey mixture into a 6-quart slow cooker. Add pumpkin purée, chicken broth, and diced tomatoes (with juices). Stir until well combined.
  5. Slow Cook: Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until the chili is thick and flavors have melded.
  6. Final Taste and Adjust: Before serving, taste and adjust seasoning. Add a splash of broth if too thick, or a squeeze of lime for brightness.

Notes

For best texture, do not skip browning the turkey and onions. If chili is too thin at the end, remove lid and cook on HIGH for 20-30 minutes to evaporate excess liquid. If too thick, stir in a little extra broth. This chili freezes well for up to 3 months.
