  • ½ cup whole berry cranberry sauce
  • ⅓ cup shelled pistachios, unsalted, roughly chopped
  • 2 tablespoons honey
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 teaspoon orange zest
  • 1 tablespoon brown sugar (optional)
  • Crackers, sliced baguette, or apple slices for serving

Instructions

  1. Preheat your oven to 350°F (175°C). Position a rack in the center of the oven. While it’s heating, take your brie out of the fridge and let it sit on the counter for about 10 minutes—room temperature brie melts more evenly.
  2. Using a sharp knife, carefully slice off the top rind of the brie wheel. You want to remove just the very top layer, leaving the sides and bottom intact.
  3. In a small bowl, combine the cranberry sauce, chopped pistachios, honey, fresh rosemary, and orange zest. Stir until everything is well mixed. If you’re using the brown sugar for extra caramelization, add it now.
  4. Place the brie in your cast iron skillet or baking dish. Spoon the cranberry pistachio mixture right on top of the brie, spreading it evenly.
  5. Bake for 12-15 minutes. You’ll know it’s ready when the brie is soft and puffed slightly, and the cranberry mixture is bubbly and fragrant. If you want a more caramelized top, you can broil it for the last 1-2 minutes—just watch it carefully.
  6. Let the baked brie cool for 2-3 minutes before serving. Sprinkle a few extra chopped pistachios and a pinch of fresh rosemary on top for garnish. Serve immediately with crackers, sliced baguette, or apple slices.

Notes

Don’t skip scoring the brie—it helps the cheese ooze out beautifully. Use room temperature brie for even melting. Watch the oven closely as brie can go from perfectly melted to a puddle quickly. For extra flavor, toast the pistachios in a dry skillet for 2-3 minutes before adding to the topping. Make extra topping—leftovers are great on cream cheese or stirred into oatmeal.
