  • 1 large egg white

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Clean and dry the pumpkin seeds: Separate seeds from pumpkin guts, rinse in a colander under cold water, and pat dry with paper towels. Let air-dry for 5-10 minutes.
  3. In a small bowl, whisk the egg white until frothy (about 30 seconds). If using vanilla extract, add it now and whisk to combine.
  4. Place the dried pumpkin seeds in a medium bowl. Pour the frothy egg white over them and stir with a spatula until every seed is coated.
  5. In another small bowl, combine brown sugar, granulated sugar, ground cinnamon, and salt. Stir with a fork to break up any clumps.
  6. Sprinkle the sugar mixture over the egg white-coated seeds and stir gently until evenly distributed.
  7. Spread the coated seeds in a single layer on the prepared baking sheet, leaving a little space between them.
  8. Roast for 20-25 minutes, stirring after 10 minutes. Check frequently during the last 5 minutes to prevent burning. Seeds are done when deep golden brown and fragrant.
  9. Remove from oven and let cool on the baking sheet for 10-15 minutes. They will continue to crisp up as they cool.
  10. Transfer to a bowl and serve, or store in an airtight container.
