  • 1/2 cup cold water
  • 1/4 cup granulated sugar
  • 1 package (3 oz) strawberry or raspberry jello
  • 2 tablespoons fresh lemon juice
  • 1/2 cup boiling water
  • Optional garnish: fresh raspberries, lemon twists, or edible glitter

Instructions

  1. Bloom the gelatin: In a small bowl, sprinkle the jello powder over 1/2 cup cold water. Let it sit for 5 minutes.
  2. Heat the base: In a medium saucepan, combine the sugar and 1/2 cup boiling water. Stir until the sugar dissolves completely. Then add the bloomed jello mixture and stir until fully melted (about 2 minutes).
  3. Add the champagne: Remove the saucepan from heat and let it cool for 2 minutes. Slowly pour in the champagne while gently stirring. Add the lemon juice and stir once more.
  4. Pour and set: Pour the mixture into an 8×8 inch glass baking dish. Pop any bubbles on top with a toothpick. Refrigerate for at least 4 hours, or overnight.
  5. Cut and serve: Once set, run a knife around the edges. Invert onto a cutting board or cut directly in the dish. Use a sharp knife or pizza cutter to slice into 1-inch squares.
  6. Garnish: Place each square in a small serving cup or shot glass. Top with a raspberry, a lemon twist, or a pinch of edible glitter. Serve chilled.

Notes

Bloom the gelatin for 5 minutes to ensure a silky texture. Use a dry brut champagne to balance sweetness. Make a day ahead for best flavor. For non-alcoholic version, substitute champagne with sparkling cider.
