  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
  • 1 tablespoon poultry seasoning
  • 1 teaspoon black pepper
  • 1 teaspoon salt (plus more to taste)
  • 3 cups low-sodium chicken broth (vegetable broth works too)
  • 2 large eggs, beaten

  1. Make the Cornbread (Day Before or at Least 4 Hours Ahead): Preheat oven to 400°F. In a large bowl, whisk together cornmeal, flour, baking powder, salt, and sugar.   5. Add the Wet Ingredients (About 10 Minutes): Pour sautéed vegetables and butter over the bread mixture. Toss gently to combine. In a separate bowl, whisk eggs into chicken broth.
