A moist, dense bundt cake that captures the tangy-sweet flavor of a fried donut without the oil. This recipe uses reduced apple cider for intense autumn flavor and is coated in cinnamon sugar.

  • 2 cups fresh apple cider (100% juice)
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup plain yogurt (Greek yogurt)
  • 1/2 cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)

Instructions

  1. Preheat oven to 350°F (175°C). Generously grease a 10-12 cup bundt pan with baking spray containing flour.
  2. In a medium saucepan, bring 2 cups of apple cider to a boil. Reduce heat to medium-low and simmer for 20-25 minutes until reduced by half (about 1 cup of syrupy cider). Remove from heat and let cool completely.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. Set aside.
  4. In a large mixing bowl, cream softened butter and 1 cup granulated sugar until light and fluffy (3-4 minutes).
  5. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  6. Alternately add the dry ingredients and the cooled reduced cider to the butter mixture, starting and ending with dry ingredients. Mix on low speed just until combined. Do not overmix.
  7. Gently fold in the yogurt.
  8. Pour batter into the prepared bundt pan and smooth the top.
  9. Bake for 45-50 minutes. Check at 40 minutes by inserting a toothpick; it should come out clean or with moist crumbs.
  10. Let the cake cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.
  11. Mix 1/2 cup sugar and 1 tablespoon cinnamon for the coating. Once the cake is cool, roll or toss it in the cinnamon sugar mixture.
