This classic green bean casserole with crispy onions is a comforting, crowd-pleasing side dish perfect for holidays and potlucks. Made with simple ingredients like cream of mushroom soup, green beans, and crispy fried onions, it comes together in about 45 minutes with minimal effort.

  • 2 cans (14.5 oz each) cut green beans, drained (or 4 cups fresh green beans, trimmed and cut into 1-inch pieces, or 1 bag (16 oz) frozen cut green beans, thawed)
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • ½ cup whole milk
  • 1 teaspoon soy sauce
  • ⅛ teaspoon freshly ground black pepper
  • ¼ teaspoon garlic powder (optional)
  • 1 ⅓ cups French’s Crispy Fried Onions, divided
  • ½ cup shredded cheddar cheese (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your green beans: If using fresh, wash, trim ends, cut into 1-inch pieces, blanch in boiling salted water for 3-4 minutes, then plunge into ice water. If using frozen, thaw under cold running water and drain well. If using canned, just drain thoroughly.
  3. In a large mixing bowl, combine the cream of mushroom soup, milk, soy sauce, black pepper, and garlic powder. Stir until smooth and well combined.
  4. Fold the prepared green beans into the soup mixture until evenly coated. If using cheddar cheese, mix it in now.
  5. Stir in ⅔ cup of the crispy fried onions. Reserve the remaining ⅔ cup for the topping.
  6. Pour the mixture into a greased 1½-quart casserole dish and spread evenly.
  7. Cover the dish with aluminum foil and bake for 25 minutes.
  8. Remove the foil carefully and sprinkle the remaining ⅔ cup of crispy fried onions evenly over the top.
  9. Return the casserole to the oven, uncovered, and bake for an additional 5-10 minutes, or until the onions are golden brown and the casserole is bubbly around the edges.
  10. Remove from the oven and let it rest for 5 minutes before serving.

Notes

For extra-crispy onions, toast the reserved ⅔ cup on a baking sheet in the oven for 2-3 minutes before adding to the casserole. You can assemble the casserole (without the topping) up to 24 hours in advance; add 10 minutes to the covered baking time if starting from cold. If doubling the recipe, use a 9×13-inch dish and increase covered baking time to 35 minutes.
