  • 1/4 cup (60 ml) apple brandy or bourbon (optional, such as Calvados or Kentucky bourbon)
  • 2 medium apples (Honeycrisp or Fuji), thinly sliced into rounds, tossed with lemon juice to prevent browning
  • 68 cinnamon sticks
  • 45 fresh rosemary sprigs
  • 1/2 cup (85 g) pomegranate seeds
  • 45 whole star anise pods
  • Small drizzle bottle maple syrup or honey (Grade A maple syrup recommended)
  • 1/4 cup (60 ml) caramel sauce (for rimming glasses)
  • 1 cup (240 ml) ginger beer or ginger ale (optional, such as Fever-Tree Ginger Beer)
  • 1/2 teaspoon vanilla extract (optional)
  • 1/2 cup (60 g) fresh cranberries (optional)

Instructions

  1. Prep your garnishes (15 minutes before guests arrive): Wash and dry apples. Using a sharp knife or mandoline, slice into thin rounds, about 1/8-inch thick. Toss in a bowl with a squeeze of lemon juice to prevent browning. Pick rosemary sprigs into smaller pieces. Measure pomegranate seeds and cranberries into separate bowls. Arrange everything in small serving bowls.
  2. Set up your rimming station (5 minutes): Pour a thin layer of caramel sauce onto a small plate. On another plate, mix 2 tablespoons granulated sugar with 1 teaspoon ground cinnamon. To rim a glass, dip the rim into caramel sauce, let excess drip off, then gently press into cinnamon sugar. Let set for a minute before pouring. Do this right before serving.
  3. Prepare the apple cider base (5 minutes): Pour fresh apple cider into a pitcher or beverage dispenser. If using vanilla extract or bourbon, stir in now. Keep pitcher in fridge until ready to serve. For non-alcoholic version, mix cider with chilled ginger beer at 1:1 ratio and keep cold.
  4. Chill your sparkling wine (at least 2 hours before): Ensure prosecco or champagne is thoroughly chilled. If forgotten, submerge bottle in an ice bath with a handful of salt for 20 minutes.
  5. Arrange the bar (10 minutes before serving): Set out glasses on a tray or buffet table. Place garnish bowls in a row, starting with apple slices and ending with cinnamon sticks. Put chilled cider pitcher next to garnishes. Keep sparkling wine in an ice bucket nearby.
  6. Build the perfect mimosa (during serving): Add a few apple slices and a cinnamon stick to the glass. Pour sparkling wine until glass is about two-thirds full. Let bubbles settle, then top off with apple cider (about one-third of the glass). If using bourbon, add half an ounce to the glass before the wine.
  7. Garnish and serve: Let guests finish their drinks with a rosemary sprig or sprinkle of pomegranate seeds. Encourage guests to try the rosemary—it adds a subtle herbal scent.

Notes

Don’t pre-mix mimosas in a pitcher—bubbles die quickly. Let guests build their own drinks. For best results, chill glasses in the fridge for 15 minutes before serving.
