Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil.
  2. Place the cubed sweet potatoes on the prepared baking sheet. Drizzle with 1 tablespoon of the melted butter and a pinch of salt. Toss to coat. Roast for 25-30 minutes, or until fork-tender and edges are caramelized.
  3. While the sweet potatoes roast, make the crumble topping. In a medium bowl, whisk together the flour, brown sugar, cinnamon, and salt. Add the cold cubed butter. Using a pastry cutter or your fingertips, cut the butter into the flour mixture until it resembles coarse crumbs with some pea-sized butter pieces. Stir in the pecan halves. Refrigerate until needed.
  4. Transfer the roasted sweet potatoes to a large mixing bowl. Add the remaining 3 tablespoons of melted butter, maple syrup, bourbon, milk (or cream), beaten egg, vanilla, cinnamon, nutmeg, and salt. Mash with a potato masher until smooth and creamy. Do not overmix.
  5. Reduce oven temperature to 350°F (175°C). Lightly grease a 9×13-inch baking dish. Spread the sweet potato mixture evenly in the dish. Sprinkle the pecan crumble topping evenly over the top. Do not press down.
  6. Bake for 25-30 minutes, or until the filling is bubbly around the edges and the topping is golden brown and fragrant. If the topping browns too quickly, tent loosely with foil for the last 10 minutes.
  7. Let the casserole rest for at least 10 minutes before serving. Serve warm.
