  • 2 inches horseradish root, peeled and chopped
  • 68 garlic cloves, smashed
  • ½ medium yellow onion, roughly chopped
  • 1 small jalapeño or serrano pepper, sliced (seeds in for more heat, out for milder)
  • ½ teaspoon cayenne pepper (or 1 small dried cayenne pepper, crushed)
  • 1 teaspoon black peppercorns
  • 1 fresh rosemary sprig (optional)
  • Strips from ½ orange peel (optional)
  • 1 star anise pod (optional)

Instructions

  1. Wash all produce thoroughly. Thinly slice ginger, turmeric, and horseradish. Smash garlic cloves. Roughly chop onion. Slice jalapeño into rings. If using orange peel, use a vegetable peeler to remove strips of zest, avoiding white pith.
  2. Layer ingredients in a quart-sized glass jar: start with harder roots (ginger, turmeric, horseradish), then add garlic, onion, jalapeño. Tuck in rosemary, orange peel, and star anise if using. Sprinkle in black peppercorns and cayenne. Leave about 1 inch of space at the top.
  3. Pour raw apple cider vinegar over ingredients until completely submerged. Add raw honey. Stir gently with a wooden spoon or chopstick to help honey dissolve. Wipe rim, screw on lid tightly, and shake well.
  4. Label jar with date and store in a cool, dark place (cupboard or pantry) for 2 to 4 weeks. Shake gently every day or two. The color will deepen from pale gold to rich amber.
  5. After 2 weeks, start tasting. Use a clean spoon to dip into liquid. If spicy enough, it’s ready to strain. If more heat or depth is desired, let steep another week.
  6. Once flavor is satisfactory, set a fine-mesh strainer over a large bowl or measuring cup. Line with cheesecloth for a clearer product. Pour contents through strainer, pressing gently on solids with a spoon to extract liquid. Discard solids.
  7. Taste strained fire cider. If too sharp, stir in an extra 1-2 tablespoons of raw honey until balanced.
  8. Use a funnel to transfer finished fire cider into clean glass bottles, leaving ½ inch headspace. Seal tightly and store in the refrigerator. Keeps for up to 6 months.

Notes

Don’t skimp on fresh horseradish root; it provides the signature sinus-clearing punch. Store at room temperature (65-75°F) during steeping. Shake daily for even flavor development. Label everything to avoid confusion. This recipe scales up beautifully; double or triple for larger batches.
