These Easy Turkey Ranch Pinwheel Roll-Ups are a quick, no-cook solution for boring lunches. Creamy ranch, tender turkey, and crisp veggies wrapped in a soft tortilla create a handheld, crowd-pleasing snack perfect for lunches, parties, or road trips.

Ingredients

Scale
  • 8 large flour tortillas (burrito-size; whole wheat or spinach work well)
  • 8 ounces cream cheese, softened to room temperature
  • 1/2 cup ranch dressing (thick, creamy variety preferred)
  • 1 pound thinly sliced deli turkey (oven-roasted or smoked)
  • 1 cup shredded cheddar cheese (sharp cheddar, Monterey Jack, or Mexican blend)
  • 1 cup finely chopped romaine lettuce (thick ribs removed)
  • 1/2 cup diced tomatoes (seeds and pulp removed)
  • 1/4 cup finely chopped red onion (optional; soak in cold water 10 minutes to mellow)
  • 1/4 cup chopped fresh parsley or chives (optional)
  • Salt and black pepper to taste

Instructions

  1. Make the ranch cream cheese spread: In a large mixing bowl, combine softened cream cheese and ranch dressing. Mix until smooth and well combined, about 2 minutes. Season with a pinch of salt and black pepper. Taste and adjust.
  2. Prep the veggies: Finely chop romaine lettuce, dice tomatoes (remove seeds), and chop red onion and fresh herbs if using. Pat lettuce and tomatoes dry with a paper towel to prevent sogginess. Set aside.
  3. Lay out a tortilla on a clean cutting board. Spread a generous, even layer (about 2-3 tablespoons) of the ranch cream cheese mixture over the entire surface, all the way to the edges.
  4. Layer 2-3 slices of deli turkey evenly over the cream cheese, overlapping slightly to cover the entire tortilla. Press down gently.
  5. Sprinkle about 2 tablespoons of shredded cheddar cheese over the turkey. Then scatter a small handful of chopped lettuce, a spoonful of diced tomatoes, and a pinch of red onion and fresh herbs (if using). Keep the layer thin and even.
  6. Starting at the edge closest to you, roll the tortilla away from you tightly, using your fingers to keep the filling tucked in. Roll firmly but gently. Place seam side down. Repeat with remaining tortillas.
  7. Wrap each rolled tortilla tightly in plastic wrap, twisting the ends like a candy wrapper. Place on a baking sheet or large plate and refrigerate for at least 30 minutes, or up to 4 hours.
  8. When ready to serve, unwrap each roll and place on a cutting board. Using a sharp serrated knife, slice into 1-inch thick pinwheels using a gentle sawing motion. Aim for 6-8 pieces per tortilla. Arrange on a platter and serve immediately or keep refrigerated.

Notes

Don’t skip the chilling step—it firms up the cream cheese for clean slicing. Pat veggies dry to prevent sogginess. Use a serrated knife with a gentle sawing motion for neat cuts. These pinwheels taste even better the next day as flavors meld. For best results, use Philadelphia cream cheese and a thick ranch dressing.
