This easy lemon garlic sheet pan salmon is a quick, one-pan dinner that delivers tender, flaky salmon and perfectly roasted vegetables with minimal cleanup. Ready in 30 minutes, it’s perfect for busy weeknights.

  • 4 salmon fillets (6 oz each)
  • 3 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 1 pound baby potatoes, halved
  • 1 bunch asparagus, trimmed
  • 2 tablespoons olive oil
  • ½ teaspoon salt (for vegetables)
  • ¼ teaspoon black pepper (for vegetables)
  • 2 tablespoons unsalted butter, melted (for sauce)
  • 2 cloves garlic, minced (for sauce)
  • 1 tablespoon fresh parsley, chopped
  • Lemon slices (for topping)

Instructions

  1. Preheat your oven to 400°F (200°C). Make sure the rack is in the center position.
  2. Wash and halve the baby potatoes. Toss them in a bowl with 1 tablespoon of olive oil, ½ teaspoon salt, and ¼ teaspoon pepper. Spread them out on one side of your lined baking sheet.
  3. Place the sheet pan with the potatoes in the oven and roast for 10 minutes.
  4. In a small bowl, combine the 3 tablespoons of melted butter, minced garlic, lemon zest, lemon juice, salt, pepper, and paprika. Whisk together.
  5. Pat the salmon fillets dry with paper towels. Place them skin-side down on a plate or cutting board.
  6. Snap off the woody ends of the asparagus. Toss the spears with the remaining 1 tablespoon of olive oil and a pinch of salt and pepper.
  7. After the potatoes have roasted for 10 minutes, pull the pan out. Push the potatoes to one side. Place the salmon fillets in the center of the pan. Arrange the asparagus around the salmon and potatoes.
  8. Using a pastry brush, generously brush the garlic butter mixture over each fillet. Top each fillet with a thin lemon slice.
  9. Return the pan to the oven and roast for 12 to 15 minutes, until the salmon is opaque and flakes easily with a fork (internal temperature of 125°F to 130°F).
  10. While the salmon rests, melt the remaining 2 tablespoons of butter with the extra minced garlic. Drizzle over the salmon and vegetables. Sprinkle with fresh parsley and serve immediately.

Notes

Do not overcook the salmon; it goes from perfectly flaky to dry quickly. Pat the salmon dry for better browning. Cut potatoes evenly for uniform cooking. Give vegetables space on the pan to avoid steaming. Let salmon rest 2-3 minutes before serving. Line the pan with parchment paper for easy cleanup.
