Instructions

  1. Make the Glaze Base: In a small saucepan, combine 1 cup cranberry sauce, 1/4 cup fresh orange juice, 1 tablespoon honey, 1 teaspoon grated ginger, 1 tablespoon soy sauce, and 1/4 teaspoon red pepper flakes (if using). Whisk over medium heat until it comes to a gentle simmer. Reduce heat to low and let it bubble for 5-7 minutes, stirring occasionally, until thickened slightly. Remove from heat and set aside.
  2. Prep the Meatball Mixture: In a large mixing bowl, combine 1 pound ground turkey, 1/2 cup panko breadcrumbs, 1 beaten egg, 2 minced garlic cloves, 1 tablespoon orange zest, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and dried thyme (if using). Gently mix with your hands until just combined—do not overmix.
  3. Shape the Meatballs: Lightly wet your hands with cold water. Scoop about 1.5 tablespoons of the mixture and roll into a ball. Repeat to make 18-20 meatballs. Place them on a baking sheet or large plate.
