Ingredients

Scale
  • 4 ounces (113g) semi-sweet chocolate, chopped
  • 4 tablespoons (56g) unsalted butter, plus extra for greasing
  • 2 large eggs, room temperature
  • 2 large egg yolks
  • 1/4 cup (50g) granulated sugar
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons (15g) all-purpose flour
  • Pinch of salt
  • 1 cup (125g) fresh or frozen raspberries
  • 2 tablespoons (25g) granulated sugar (for sauce)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon cornstarch mixed with 1 tablespoon cold water
  • Powdered sugar, for dusting
  • Fresh raspberries, for garnish (optional)
  • Vanilla ice cream or whipped cream, for serving (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Generously butter two 6-ounce ramekins and dust with cocoa powder or flour. Place on a baking sheet.
  2. Make the raspberry sauce: In a small saucepan, combine raspberries, 2 tablespoons sugar, and lemon juice. Cook over medium heat, stirring occasionally, until raspberries break down and mixture comes to a gentle boil (about 5 minutes). Stir cornstarch slurry, then pour into saucepan. Cook 1-2 minutes until thickened. Set aside.
  3. Melt chocolate and butter together in a small saucepan over low heat or in a microwave-safe bowl in 20-second intervals, stirring until smooth. Set aside to cool slightly.
  4. In a medium bowl, whisk whole eggs, egg yolks, 1/4 cup sugar, and vanilla extract vigorously for about 2 minutes until pale, thick, and ribbon-like.
  5. Pour melted chocolate mixture into egg mixture. Fold gently with a rubber spatula until just combined (about 15 strokes).
  6. Sprinkle flour and salt over batter. Fold until just incorporated. Batter should be thick and glossy.
  7. Divide batter evenly between prepared ramekins (about 3/4 full). Smooth tops.
  8. Bake for 12-14 minutes. Cakes should be set around edges but jiggly in center. Tops will look puffed and slightly cracked.
  9. Remove from oven and let rest for exactly 1 minute. Run a small spatula or knife around edges to loosen. Place a serving plate upside down over each ramekin and flip to unmold.
  10. Serve immediately: Spoon raspberry sauce around cake, dust with powdered sugar, and garnish with fresh raspberries and ice cream or whipped cream if desired.

Notes

Don’t overmix the batter. Use good quality chocolate. Watch the clock carefully—the difference between perfect and overbaked is about 90 seconds. Room temperature eggs are crucial. Butter ramekins thoroughly. Make the sauce first. Can prep ahead by filling ramekins up to 24 hours in advance and refrigerating; bring to room temperature before baking and add 1-2 minutes to baking time.
