Ingredients

Scale
  • 1 box (8.5 ounces) Jiffy corn muffin mix
  • 1/3 cup milk
  • 2 large eggs, divided
  • 1 pound bulk pork sausage
  • 1 medium yellow onion, diced (about 1 cup)
  • 2 celery stalks, diced (about 1/2 cup)
  • 3 cloves garlic, minced
  • 1/4 cup unsalted butter
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 1/2 cups chicken broth
  • 1/2 cup dried cranberries (optional)
  • 1/4 cup fresh parsley, chopped (optional)
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat oven to 400°F. In a medium bowl, mix corn muffin mix, milk, and 1 egg until just combined. Pour into a greased 8×8 pan or small cast iron skillet. Bake for 15-20 minutes until golden and a toothpick comes out clean. Let cool completely.
  2. While cornbread cools, heat a large skillet over medium-high heat. Add sausage and cook, breaking it up, until browned and cooked through (6-8 minutes). Transfer sausage to a plate with a slotted spoon, leaving about 2 tablespoons drippings in the pan.
  3. Reduce heat to medium. Add butter to the skillet with drippings. Once melted, add onion and celery. Cook 5-6 minutes until onion is translucent and celery is tender. Add garlic and cook 1 minute until fragrant.
  4. Once cornbread is completely cool, crumble it into a large mixing bowl, aiming for a mix of fine crumbs and pea-sized pieces.
  5. Add cooked sausage and sautéed vegetables to the bowl with crumbled cornbread. Sprinkle with sage, thyme, black pepper, and salt. Toss gently to combine.
  6. In a small bowl, whisk together chicken broth and remaining beaten egg. Pour over cornbread mixture and stir gently until everything is moistened (mixture should look like wet sand).
  7. Preheat oven to 350°F. Transfer stuffing mixture to a greased 9×13 baking dish and spread evenly. Bake for 25-30 minutes until top is golden brown and crispy. Optional: broil last 2 minutes for extra crispy edges.
  8. Let stuffing rest 5 minutes before serving. Garnish with fresh parsley if desired.

Notes

For best results, let cornbread cool completely before crumbling. Don’t overmix once liquid is added. For extra crispy edges, broil for last 2 minutes. Can be assembled up to 24 hours ahead and refrigerated before baking.
