A creamy, pudding-like overnight oatmeal made with rolled oats, chia seeds, peanut butter, and ripe banana. This easy meal prep breakfast requires just 5 minutes of prep time and provides a satisfying, nutrient-dense start to your day.

  • 1/2 cup (40g) Old-Fashioned Rolled Oats
  • 1 tablespoon (12g) Chia Seeds
  • 3/4 cup (180ml) Milk (dairy or plant-based)
  • 2 tablespoons (32g) Creamy Peanut Butter
  • 1/2 medium Ripe Banana
  • 1/2 teaspoon Vanilla Extract
  • Pinch of Salt
  • 1 teaspoon Honey or Maple Syrup (optional)

Instructions

  1. Mash the half ripe banana thoroughly in a mason jar until it is almost a puree.
  2. Add the old-fashioned rolled oats and chia seeds to the jar with the mashed banana.
  3. Pour in the milk.
  4. Add the peanut butter, vanilla extract, salt, and honey/maple syrup (if using).
  5. Mix thoroughly with a spoon or small whisk, scraping the sides to ensure chia seeds and peanut butter are fully incorporated. Add a splash of milk if too dry.
  6. Seal the jar with a lid and refrigerate for at least 4 hours, preferably overnight (6-8 hours).
  7. In the morning, stir well. If too thick, add a splash of milk. Top with fresh banana slices or extra peanut butter if desired.

Notes

Use old-fashioned rolled oats, not instant, for the best texture. Mash the banana well to distribute sweetness. Whisk chia seeds immediately into milk to prevent clumping. For best results, let sit overnight. Can be stored in the fridge for up to 5 days.
